Sorta made-up.


  • 1 lb raw ground beef
  • 1 box Spanish Rice box mix (or make your own); or, use leftover rice
  • 1 packet taco seasoning
  • 1 26 oz jar spaghetti or tomato sauce
  • 6-8 large bell peppers (any color)
  • About 4-6 oz shredded cheddar or other mild cheese (or sliced)


  1. Preheat oven to 350 F.
  2. Cut tops off peppers and arrange, open side up, in the dish
  3. Prepare Spanish Rice
  4. Combine beef, cooked rice, taco seasoning, and 1 c of the spaghetti sauce in a large bowl
  5. Lightly stuff meat mixture into peppers
  6. Put about a teaspoon of spaghetti sauce on top of each pepper and pour the rest around the bottoms of the peppers
  7. Cover and cook about 60-65 minutes (til center reaches at least 160 F and peppers are soft)
  8. Uncover, sprinkle with cheese, and cook another 10-15 minutes
